From the salt marshes of Guerande this fantastic salt is hand harvested year round and packaged in beautiful linen bags. The white crystals float on the surface of the marsh and are hand scraped, almost scooped out. The Atlantic sea water flows into the marshes, where it collects after natural evaporation. The salt is coarse but delicate, and has been harvested much the same way since the year 868. Used in a wide range of foods, from regular savory cooking (wait until the end to toss it, to make the most of the flavor) to sweet preparations like caramels and chocolate fleur de sel de Guerande melts easily and is quite moist so don't transfer it to a regular grinder, as it will most definitely get stuck.
