Panic striken? You have never made Risotto? Here's how: soak the dried Porcini mushrooms in lukewarm water for 20 minutes. Warm up some broth on the side. In a pan deep enough to contain a few cups of broth, sautee some chopped onion in EV olive oil. When the onion turns translucent add about 1/2 cup of rice per person. Stir quickly and thoroughly. When the rice smells like it's starting to "toast", add half a glass of red wine. Let the wine evaporate, stir in the drained and chopped mushrooms, mix them well with the rice and cook for a couple of minutes. Start adding 2 cups of stock at the time until rice is cooked, making sure to leave some liquid in the pan to keep the rice moist. Serve immediately with a generous grating of Parmigiano Reggiano and some fresh chopped parsley.
