Product Description This cheese comes from cows that graze the pastures of the Jura Mountains in Comte 6,000 feet above sea level. The climate is perfect for the cows to have their milk give a hint of mushrooms and tarragon flavors in it. The Bleu de Gex became a part of the AOC in 1977. It usually ages around one to three months before it is ready for sale.
