A caviar fished in America from rivers like the Ohio river, paddlefish is from the sturgeon family, some say a distant relative. This caviar is getting real popular with all the chefs, due to its mild nutty flavor and its relatively good supplies. Dark gray to black in color about the size, maybe a little smaller than Caspian sevruga. A very good buy!
