Editorial Reviews:
Product Description Named after a small rural town in the French Alps, a whole wheel of this cheese weighs over 80 pounds. We found it to be creamier and richer than other Alpine cheeses like Emmental, Gruyere, and Comte. The term D'Alpage indicates that this Beaufort is made from milk taken from Tarines (a breed of mountain cows) that graze naturally. Due to harsh winters, the cows can only graze in the summer, making this "Prince of Gruyeres" a seasonal treat. Aging of up to eight months takes place in the cooler months in rural Alpine cellars. With each bite, hints of various grasses, herbs, and wildflowers are notable to those with sensitive palates. Its flavor is nutty, creamy, and sweet. Like Gruyere, Beaufort melts well and is perfect for fondue and hot sandwiches. - Made from unpasteurized cow's milk.
