The small-scale, artisan production of this Manchego by Dehesa de los Llanos yields an exquisite cheese that is hand-formed, wrapped, and salted over a 24 hour period. Dry cured for one year in an eighteenth century cave, this Manchego has a robust flavor reminiscent of the Mancha countryside. Enjoy it as the locals do - served before the meal, topped with a spot of membrillo (Spanish quince paste). Also lovely when dipped in honey. - Made from unpasteurized sheep's milk.

Beware the shipping costs December 17, 2007 Joanne Marcinek (CT USA) Buyer beware. I ordered this cheese, not quite realizing how small 1 pound of cheese is and how big a box they would use to ship it, and practically paid more for the shipping than I did for the cheese.

It is hard to find raw milk or unpasteurized cheese. This one was great. Product arrived in excellent condition (like right out of supermarket).

This glorious cheese has changed my life for the better. My mutton, which has been purified in the waters of Lake Minatonka (located in an 18th century cave south of Jerez), will perfectly with a glass of delicious 2003 Buttonwood Farm Winery Savignon Blanc. This is the perfect jacuzzi cheese, only Humboldt Fog attracts the opposite sex with more vigor and vitality. Tres mangnifique!
