Cave-aged Emmental is an entirely different and much more sophisticated product. Aged for 12 months deep in caves in Lucerne, Switzerland, it develops a full bodied and complex flavor, full of nutty notes and lovely sharp flavor edges. The temperature of the caves are constant year-round, with a high humidity that helps the flavors of the cheese wheels develop and mature to their peak. The texture is firm but drier than most other Swiss-like cheeses, with an intense yet not overwhelming flavor. Perfect for melting on dishes like fondue or French onion soup.
