A smaller version of the Cantal cheese, Cantalet is young cheese produced in the same way as Brittish cheddars. You'll love that it has a mild sharpness to it but also sweet notes and buttery taste. It typically arrives with specks of blue mold - this is normal - that can be scraped off.
