Gaperon is made from a mixture of fresh milk and buttermilk. It's name means buttermilk in Auvergne, where it originated. It is made with several herbs and peppers. This cheese has a smoked, spicy flavor to it. This cheese matures 6 weeks before it is ready for sale.
